When you remove the app your account will still exist, so your content will still be available on the web application, your iOS or Android app.
If you want to remove your account, you can head over to User Preferences (click on your Initials on the top right) > Settings > Account Information | Delete Account.
Be aware: Your account can only be deleted when you have no active subscription. If you want to delete your account with an active subscription, first make sure to deactivate your subscription as well.
